Maple Barbecue Sauce

 

First day of summer, barbecue ribs on the patio!

Real Maple syrup, the next best thing to heaven, is my favorite sweetener by far. It is also the most expensive sweetener by far, so it is used carefully and jealousy guarded around here to the last drop. We buy Trader Joes Grade B Maple Syrup and it is the most wonderful stuff. I get twitchy if I do not have a backup bottle in the walk-to pantry. (the one in the garage). This recipe is worth cracking open the bottle. It doesn’t take much and gives us the all time best barbecue ribs ever, a thin, sticky, sweetish coating.

  • 1/2 cup maple syrup (only the real stuff will do, no corn syrup substitutes, no Aunt Jemima)
  • 1/4 tsp cayenne pepper
  • 2 cloves diced garlic
  • 2 Tbsp catsup (or tomato sauce in a pinch)
  • 1 Tbsp mustard
  • 2 Tbsp lemon juice (or vinegar)
  • 1/2 tsp salt and some pepper

Just combine ingredients. Use to lovingly baste your ribs or chicken, humming and licking your lips.
