Now here is a simple dessert that has one young friend of ours literally on his knees, begging for more. It comes from the Pioneer woman, so it’s gotta be good. Its my emergeny quick dessert, when I am caught off guard. (yes, it happens more and more) I have used fresh and frozen fruit, both with sucess. Get started!
- 1 stick of melted butter
- 1 1/4 cups plus 2 tsp sugar divided
- 1 cup self rising flour (or just regular flour with 1 1/2 tsp baking powder and 1/4 tsp salt. added)
- 1 cup milk
- 2 cups fresh or frozen berries or peaches
Heat the oven to 350 degrees
get out a baking dish, like a pyrex 8 x 8 or another 3 quart sized pan that grabs your fancy.
In a mixing bowl, whisk 1 cup sugar, flour and milk. Whisk in the melted butter and pour this into your dish of choice.
Rinse off your berries and pat dry (for fresh). Rinse lightly for frozen, you will never get them dry.
Sprinkle the berries over the top of the batter. Now sprinkle 1/4 cup of sugar over this. Bake for 1 hour or until golden brown and bubbly.
***When 10 minutes of cooking time remains, sprinkle the remaining 2 Tbsp sugar over the top and pop back into the oven.
The first time I made this, Phil and I dug right into the pan with spoons “mming” and “yumming” throught half the pan, warm from the oven!
