Some of us around here really could just live on tacos for dinner. Or lunch. Breakfast? Don’t be silly. That would be breakfast burrito time. Some others of us stick their noses up at the mere word ‘taco’. But this post isn’t for them. They can have cereal on taco night for all I care and usually do.
Whenever I am at a loss and ask hubbs what sounds good for dinner, 99.9% of the time the answer will be—Tacos! (Fact is if I made but alternate nights of tacos and spaghetti, at least someone would be happy every night.)
Beef tacos, carnitas, and if its Friday (and only if) then it’s fish tacos.
But what to have with it? Refried beans of course. Over and over and over and over….. Hmm. Couldn’t there be something else to have with it?
Okay, but more. More than chips.
Here is an easy-breezy dish that is so fresh and tasty. The recipe came from our dear friend Cassie, mother of Wendy, the cutest Corgi ever, who lived for a while in Costa Rica.
Here is what you need:
Beans n Rice
about 2 cups cooked rice, brown or white
1 can black beans, rinsed
Cilantro, a bunch
1/2 Onion, diced
Chop up about 1/2 your cilantro.
Mix the rinsed beans with the rice. Add the onions and cilantro. Squeeze in the juice of one lime. Add some “Creole” seasoning or spicy seasoning of your choice and some Lawrys seasoned salt type too.
Thats really it. Heat it up if it is too cool.
